Steps to make 晶莹剔透——紫薯水晶粽

  • 1.紫薯去皮蒸好。
  • 2.趁热压成紫薯泥,加入炼乳及糯米粉拌好,加的量我的只是个参考,喜欢甜口的就多加点,我的耐甜度不高,糯米粉的量看根据紫薯泥的操作程度,水份不大粘手即可。
  • 3.绿西米用水沥一下,一定分快,并且你装西米的最好是可以当时就沥水的,有小细孔的,否则西米会一碰就碎。
  • 4.紫薯泥做好自己喜好的大小。这要看你包的粽子多大,别外你是想它隐约的紫色还是直接露出来,我喜欢露出来的,做的大了些。
  • 5.粽叶泡一下,洗净。干粽叶的话就要提前泡好。
  • 6.准备两个粽叶,光面朝上,用剪刀去掉叶子根上的尖尖。
  • 7.卷成一个筒状,椎形。
  • 8.放入少量西米,压实。
  • 9.放入紫薯泥。
  • 10.再放入西米盖上。
  • 11.将上方的粽子叶向下盖,用手将两边盖严,形成一个三角形,把多余的部分折过来。
  • 12.用麻绳,或者棉绳或者绳草绑好。
  • 13.上蒸锅,水开后大火蒸40分钟。
