清新柠檬芝士挞

  • 鸡蛋16克

  • 奶油奶酪90克
  • 全蛋液50g
  • 玉米淀粉8克
  • 淡奶油18克
  • 柠檬汁20ml

Steps to make 清新柠檬芝士挞

  • 1. 黄油室温软化,打发至松散
  • 2.加入糖粉,打发至黄油颜色发白,体积膨大。
  • 3.温鸡蛋打散,分次加入
  • 4.每次都需要搅打均匀,再加入下一次。
  • 5. 加入过筛好的低筋面粉
  • 6.拌匀至无干粉状态即可包上保鲜膜,放入冰箱
  • 7.包上保鲜膜,放入冰箱冷藏1小时
  • 8.揉面垫撒上些许干粉,取出冷藏的面团,擀成比派盘稍大一些的长方形,厚度保持在3mm左右为佳
  • 9.把派皮放入派盘里,用手指按压贴合好,用擀面杖滚一圈把边缘去除用叉子在派皮上插出小孔,藏松弛30分钟
  • 10.在派皮上垫上油纸,压上派石,放入预热好的烤箱中下层,180度烘烤15分钟后取出派石,再放入烤箱180度烘烤12分钟
  • 11.#芝士柠檬馅制作#室温软化奶油奶酪,加入糖粉
  • 12.用打蛋器拌匀至乳膏状
  • 13.分次少量加入室温全蛋液,每次拌匀再加入下一次
  • 14.筛入玉米淀粉拌匀
  • 15. 加入淡奶油拌匀
  • 16.加入柠檬汁,柠檬皮拌匀
  • 17.拌匀的芝士馅可以过筛一次会更细腻
  • 18.把做好的芝士柠檬馅倒入烤好的派皮里,轻震几下,放入预热好的烤箱中层,170度烘烤25分钟左右取出
  • 19.放上切片的柠檬,放凉即可食用,或者放冰箱冷藏3-4小时后再吃。吃前撒些糖粉用薄荷叶做装饰即可
