翠绿色的心情——抹茶蛋糕卷

  • 蛋黄100克
  • 蛋清150克
  • 细砂糖85克

Steps to make 翠绿色的心情——抹茶蛋糕卷

  • 1.将抹茶粉加入热水,玉米油拌均
  • 2.再加入过筛后的低粉与玉米淀粉的混合物,拌均。
  • 3.最后加入蛋黄100克(大约三个)拌均
  • 4.将蛋白放入无油无水的盆中,将细砂糖分三次放入用电动打蛋器打发至湿性发泡
  • 5.打发后的蛋白分三次加入蛋黄糊中,用切拌手法将两者混合拌均,不能打圈拌,以防止蛋白消泡
  • 6.拌好后,烤盘放入油纸或油布,将糊倒入其中,抹平表面,顿出汽泡。烤箱预热180度,中层,上下火,20分钟。
  • 7.烤好后,趁热撕掉油纸,去掉底部表皮,为了好看,上面表皮也可以去掉,同样用油纸贴掉或者用刮刀小心刮掉
  • 8.当蛋糕不再烫手时,用擀面杖辅助卷好蛋糕卷,放冰箱冷藏半小时切片即可
