【江苏】走油肉
走油肉是一道色香味俱全的汉族名肴,属于浙菜系。此菜有着皮起皱纹、色泽红润,酥烂鲜香,酥而不腻,青菜爽口的特点,下饭最宜。虽说是浙菜系,但是江苏、上海都有这道菜,而且做法略微不同,我今天做的就是我家的做法,只是不想起油锅偷懒买了现成炸好的!不管怎么做,好吃才是硬道理!

  • 走油肉350g
  • 白菜帮150g
  • 料酒2勺
  • 砂糖1勺
  • 生抽3勺
  • 蚝油1勺
  • 少许
  • 老抽2勺
  • 香油几滴

Steps to make 【江苏】走油肉

  • 1.准备好一块炸好的走油肉,偷懒不想在家起油锅
  • 2.用温水浸泡1小时左右,肉皮朝下
  • 3.看到猪肉皮起皱发软即可
  • 4.把走油肉切成小片,最好切薄点,我的刀功不行,只能这样了
  • 5.用点蔬菜垫底,一般都用青菜,我家只有白菜,我用了白菜帮切成小片
  • 6.把走油肉铺在蔬菜上
  • 7.锅中加入料酒、生抽、老抽、蚝油、盐、砂糖和少许高汤煮开,还可以加点桂皮、八角一起煮
  • 8.把煮开的酱汁淋在走油肉上
  • 9.放入蒸锅中蒸45分钟左右即可,我是放在电饭煲里蒸的
  • 10.时间到
  • 11.把蒸好的汤水重新倒回锅中加热至浓稠
  • 12.再次淋在走油肉上即可
