避风塘酥脆虾
虾的蛋白质含量极高,脂肪含量少,是老少皆宜的美味。平时我家多用白灼或者剥虾仁煮汤、炒菜的方法,省事又好吃。但今天我来个不一样的“避风塘酥脆虾”。

光听名字就能将烹饪方法猜出个八九不离十了。没错,想要大虾酥脆,需要油炸,也意味着这菜有点儿“重口味”。

我在饭店吃过两次,回来又后找了个专业大厨的视频认真学习了一下,经过这次尝试,感觉还成。做法挺简单的,只是用料和过程比我平时做菜稍显复杂。味道一点儿不比饭店差,好吃又实惠。

油炸食物要少吃,偶尔放纵一下也无妨。一个字:香! 两个字:确实香!

  • 大蒜100克
  • 半湿豆豉1把
  • 海米1把
  • 方便面饼1块
  • 黄飞红麻辣花生1把
  • 金黄面包糠1把
  • 青蒜叶1把

Steps to make 避风塘酥脆虾

  • 1.大虾清洗干净。
  • 2.剪掉虾须、虾脚。
  • 3.将虾的背部划开,取出虾线。
  • 4.入开水锅中煮1-2分钟,虾壳变红,虾肉翻开,捞出沥水备用。
  • 5.一块方便面饼、一把半潮不干的豆豉、一把海米入烤箱120度烤15分钟。
  • 6.把方便面饼、豆豉、海米干、一把带着麻椒和辣椒的黄飞红花生同入料理机中,打成碎末。
  • 7.大蒜剁末,用凉水浸泡淘洗3遍,尝一尝没有明显的辛辣味,捞出沥干水。
  • 8.炒锅中倒适量油,油2、3成热时,将蒜末入油中慢慢炸金黄,捞出控油备用。
  • 9.锅中留底油,将焯过水的大虾入锅中煎炒至酥脆。
  • 10.撒适量盐、抓一把金黄面包糠小火同炒半分钟。
  • 11.将蒜酥、步骤6中的调料碎入锅。
  • 12.撒一把青蒜叶,翻拌均匀出锅。
  • 13.避风塘酥脆虾,外皮酥脆,虾肉紧实,鲜香味美~
