  • 香油一茶匙

  • 蒜碎半汤匙
  • 姜片两片

Steps to make 家常地三鲜

  • 1.土豆一个,切块。
  • 2.茄子切块(比土豆块大一点),辣椒切块(和茄子差不多大)。
  • 3.蚝油一汤匙,香醋一汤匙,酱油一汤匙(生抽老抽一比一为好)一茶匙盐白糖半茶匙,味精半茶匙,五香粉一茶匙,香葱两根切碎。
  • 4.蒜碎,红辣椒碎,姜片,虾米一撮(食指中指拇指捏一下的一撮)。
  • 5.倒足够的油,中火,油五成热,下土豆,不断用漏勺的背面(圆凸的那边向上)铲,防止粘锅。
  • 6.等土豆外壳发硬,下茄子。茄子软了,以后,捞出土豆和茄子。
  • 7.大火烧油,下土豆茄子和辣椒,勺子背面铲几下即可。
  • 8.炸好的三种材料。
  • 9.把油倒出来,不要再放油。小火,炒辣椒段,蒜碎,虾米,有虾米的香味下三种材料,翻炒几下,倒入汁,转大火,迅速翻炒。翻炒可以用勺子背,一下提起,不要来回炒,来回炒就容易碎烂。
  • 10.出锅放香油即可。
