  • 细砂糖30g
  • 奶粉8g
  • 高筋面粉220g
  • 干酵母2g
  • 黄油16g(室温软化)
  • 红曲粉少许

Steps to make 萌萌滴【挤挤小黄鸡面包】

  • 1.南瓜去皮、切块,放入碗里上锅蒸熟,最好盖上保鲜膜,蒸汽倒流,会导致南瓜泥更湿的。买的南瓜不同,含水量不同,最后做出来的南瓜泥湿度不一样,后期揉面的时候需要自己斟酌调整
  • 2.蒸熟之后,用料理机打成南瓜糊糊,越细越好。没有料理机的,可以晾凉之后放到保鲜袋里,用擀面杖擀细
  • 3.把面团材料中除黄油外的所有食材按照底层液体、中层粉类、上层干酵母的顺序全部放入面包机桶里,选择和面程序20分钟
  • 4.加入室温软化的黄油,再开启和面程序20分钟,揉至面团完全阶段
  • 5.这时候已经可以抻出手套模了
  • 6.把揉好的面团放入干净的容器里,盖上盖子或保鲜膜,在温暖处进行发酵
  • 7.发至两倍大即可
  • 8.然后取出面团,在面板上按压排气。
  • 9.先分出来一个40g的小面团做小黄鸡的翅膀和嘴巴 ,盖上保鲜膜备用。其余部分平均分成8份,差不多50g一个
  • 10.把8个面团放入18cm中空烟囱模具中
  • 11.剩余的面团,分成8份(翅膀),3g一个
  • 12.然后底部刷点水,翅膀摆到相应部位。记得盖保鲜膜,防止面团变干
  • 13.剩下的一点面团加少许红曲粉,揉成红色面团
  • 14.分出8个0.5克左右的小面团,揉圆之后用刮板在中间位置切一道痕迹,做成小黄鸡的嘴巴(红色面团会有剩余)。全部做好之后,刷点水粘到相应位置
  • 15.放入烤箱进行二次发酵。不用很久,发酵温度30度,半个小时就可以了
  • 16.然后烤箱预热,上下管170度。预热好之后,模具放在烤箱最下层开始烤,170度,30分钟。怕上色的注意中途加盖锡纸,也别因为怕上色而烤不熟,那样凉了之后表面会变皱。烤箱温度视自己烤箱特性进行调制。烤好之后立即取出,脱模之后放在烤架上晾凉
  • 17.然后用烘焙色素笔画上表情就可以了,没有的可以用巧克力,装到裱花袋里,加热融化,前端剪一个小口,画就可以了
