月饼馅之白豆沙馅
又到中秋节了,我又开始忙不停地炒月饼馅。今天这道月饼馅依然是用江西玉山特产的白金豆。如果想做白豆沙,超市里的大白芸豆也是可以的。用高压锅压熟,再用料理机打成豆泥,再上锅炒。不过,真是个体力活,一定要做好心理准备噢!豆馅里面如果只放糖还是太干了,因此还要放些植物油才好,用大豆油、玉米油、或者葵花籽油都好,不建议用花生油,因为会有很浓的花生味,也不建议用橄榄油,因为超过80度,会破坏其营养。我用的九三葵花籽油,炒出来的豆沙很滋润、无异味。

Steps to make 月饼馅之白豆沙馅

  • 1.干的白金豆挑去杂豆、坏豆,清洗两遍后,泡发
  • 2.豆子完全泡发好后,清水再洗两遍
  • 3.入高压锅内胆中,选择焖饭档即可
  • 4.豆子焖熟了,可以晾凉后捞出,如果不喜欢太重的豆腥味,可当煮豆的汤倒去,清水洗两遍
  • 5.取适量的豆子,加两碗水,入破壁料理机的杯子中,启动浓汤程序
  • 6.豆子被打成细腻的豆泥
  • 7.豆泥入不粘炒锅中,先中小火煮开,不停地用铲子搅拌,以防糊锅
  • 8.可加入100克九三非转基因葵花籽油,慢慢搅拌,使油完全混合到豆泥之中
  • 9.待豆泥水份蒸发不少,变得有些粘稠时,可加入300克白糖,继续炒制
  • 10.待豆泥变成豆沙状,用铲子挑起来,能成完成的一坨,就炒好啦
  • 11.看哪,还是很细腻滋润的
  • 12.因为用的月饼模具做的造型,为了便于脱模,在模具里抹了一层油,所以成品有些微微黄迹,但一点不影响口味
