玛格丽特饼干
最近看到圈子里烘焙爱好这都在做玛格丽特饼干,说实话,做烘焙4、5年的我,还真是没有做过玛格丽特饼干。
玛格丽特饼干,制作简单,失败率低,口感却非常可口,入口即化,说是最佳上手饼干可是一点儿也没错!

  • 低筋粉100克
  • 玉米淀粉100克
  • 熟蛋黄2个
  • 糖粉60克
  • 食盐1克

Steps to make 玛格丽特饼干

  • 1.煮熟2个鸡蛋,取蛋黄放在筛网上,用手指按压,使蛋黄通过筛网,成蛋黄末;
  • 2.黄油室温软化+糖粉+食盐,用打蛋器打发至蓬松状态;
  • 3.倒入过筛的蛋黄末,拌匀;
  • 4.低筋粉+玉米淀粉混合拌匀;
  • 5.将混合好的粉类过筛后,放入黄油里;
  • 6.用手揉成光滑的面团,揉好的面团的状态略微偏干,将面团用保鲜膜包好,放入冰箱冷藏1个小时;
  • 7.取出面团后,取一小块揉成小圆球放在烤盘上,用大拇指压扁,饼干会有自然的裂纹;
  • 8.烤箱提前预热,放入烤箱上下管170度,烤15~20分钟即可。
