Steps to make 茭白烩虾球

  • 1.原料图。
  • 2.将虾去除虾线,剥成虾仁,虾头处理干净,装入碗中,一旁备用。
  • 3.虾仁洗净后,用少量盐,料酒,滴入少许白酒去腥,生粉抓匀,腌制20分钟,这样炒出的虾仁劲道有弹性。
  • 4.茭白,火腿肠,红椒切丁。生姜切丝。
  • 5.切好的食材汆水。
  • 6.捞出沥干。
  • 7.锅中倒入底油,油量多些。将腌制好的虾仁倒入,中火炸制。
  • 8.炸成金黄色后捞出控油。一旁备用。
  • 9.炸虾的油无需丢弃,将处理干净的虾头放入,小火熬制。
  • 10.当熬制虾头变脆,颜色变深时捞出虾头。
  • 11.锅中的油用漏勺滤去杂质,灌入瓶中。
  • 12.得到的虾油烧菜,凉拌菜都可。虾头撒上椒盐可以作为小零食食用。
  • 13.锅中留下少量底油,将汆水后步骤6的食材倒入翻炒。
  • 14.滴入少量柠檬汁。淋上少许生抽。
  • 15.将炸好的虾球倒入翻炒,撒上少量盐调味即可。(虾球由于提前用盐腌制,因此后期调味无需过重)
