怎样蒸出细嫩软滑的鸡蛋羹,今天做的是紫菜炖蛋,取鸡蛋二个,无沙即食紫菜少许。鸡蛋打入碗中,加适量食用盐搅匀,放进切碎的紫菜,再加水或高汤。蛋水比例:1:2比较好。简单说,水是蛋液的2倍就行了,淋上油拌匀,清水上锅,大火烧开,一定要烧开哦,把蛋液碗放上隔水蒸,改中火蒸五分钟之后,关火再焖五分钟,鸡蛋羹就差不多好了。吃辣的可淋上油辣酱,细嫩软滑鸡蛋羹即成,就可以享用啦。
