榨菜鲜肉月饼

Steps to make 榨菜鲜肉月饼

  • 1.榨菜切碎。
  • 2.取一大碗,放入肉末,榨菜,鸡蛋,五香粉,鸡精,料酒,盐,糖,香油,白胡椒粉。搅拌均匀至挂浆。
  • 3.面皮分为油皮和酥皮。油皮:面粉110g,色拉油35g,水40g。
  • 4.酥皮:面粉80g,色拉油35g。
  • 5.用筷子搅拌均匀,揉成光滑面团。包上保鲜膜,饧15分钟。
  • 6.分别将油团和酥团平均分成六份,因为我要做的是比较小的那种,所以分成六分,如果想做正常的就分成四份。
  • 7.取一油团擀成圆形面皮,包裹住酥团。
  • 8.收口朝下。
  • 9.用手压扁,擀成椭圆形面皮,不用太薄。
  • 10.将面皮折两折。
  • 11.开口朝下。
  • 12.再次压扁,擀成椭圆形,再这两折。
  • 13.开口朝下,擀成椭圆形面皮,卷起。
  • 14.卷好的面团一切为二,切口朝下。
  • 15.按扁,擀成圆形作为月饼皮。
  • 16.包入准备好的肉馅。收口朝下放在刷过油的烤盘上。
  • 17.烤箱预热200度,烤15分钟,将月饼翻面,再烤5分钟即可。
