传统意义上来说,蛋奶酒应该是圣诞特饮,不过,对于没事爱喝点小酒的我来说,天冷了来一杯,浑身暖洋洋的,有一点点晕乎乎的,感觉特别的好,这几天全国范围内大面积降温,来一杯,浑身暖洋洋的,真不错,

  • 淡奶油70g
  • 鸡蛋一枚
  • 朗姆酒10ml
  • 全脂牛奶130g
  • 白砂糖20g

Steps to make 蛋奶酒

  • 1.淡奶油和牛奶混合,
  • 2.蛋黄打散,
  • 3.淡奶油和牛奶加白砂糖加热至糖化,
  • 4.小火,慢慢把蛋黄加入,边搅拌边加,
  • 5.朗姆酒一般分为三种,白朗姆酒、金朗姆酒和黑朗姆酒,这里我用的是金朗姆酒,味道醇厚一些,没有的白朗姆也行,
  • 6.倒入朗姆酒,搅拌均匀,(这里我是用的30ml,原谅我个酒鬼,一般不建议用这么多,按配料的来就好,不然很多人都会觉得酒味重,不太会喝,)
  • 7.加热至沸腾后关火冷却,
  • 8.蛋白加10g白砂糖打发至硬性发泡,与上一步微微冷却的蛋奶液混合,
  • 9.肉豆蔻,
  • 10.磨粉,撒适量的蛋奶酒表面提味即可,(味道比较浓郁,建议少来一点,)
