让人爱不释口的妈妈牌秘制香辣剁椒酱
对于辣味的喜爱,也许不及川湘地区的人们的深入骨髓
但,至少也是无辣不欢,是日常餐桌必不可少的味道之一
每每入川,总是忙于寻找那些街头巷尾的小吃或是大店小店的辣味菜
比起油辣子,对香辣剁椒酱的爱更甚
做个剁椒鱼头,香辣汤或是炒个辣菜,这香辣剁椒酱都是极好用的



说起香辣剁椒酱,我只爱妈妈做的秘制剁椒酱,比起外买的剁椒酱,更多一种独有的香味儿
以前每次回家,妈妈都会装上一大罐打包让我带回来,总笑自己如骡子一般,尽驼一些沉甸甸的东西
嘴里虽然经常叨叨重量太沉,却无法放弃对秘制剁椒酱的爱
渐渐的,就从妈妈那儿学来了秘方,自己开始做剁椒酱,就不用辛苦的当“骡子”了
之所以称之为妈妈牌秘制香辣剁椒酱,自然就是与外买的辣酱尤其独特之处
嘘!不带外传的哦,秘密就在福建特有的青红酒上
青红酒的作用,不仅可以使辣酱更易于保存,不易腐坏,而且酒香更能激发出辣椒的原有的香辣味儿,使得辣酱更加香辣醇
不论是炒个辣菜,煮个辣汤面,就是直接用来拌饭都特别好吃哦
现在,我就背妈妈,把秘方悄悄的告诉你们,但是,首先你得先学会酿制青红酒哦。。呵呵

  • 大蒜80g
  • 青红酒150g
  • 60g
  • 50g

Steps to make 让人爱不释口的妈妈牌秘制香辣剁椒酱

  • 1.将新鲜辣酱用湿纱布搽干净表面的灰尘和杂质
  • 2.将搽干净的红椒放在容器里,放置在太阳下晾干辣椒表面水分
  • 3.将已经晾干水分的辣椒,用食物剪刀剪成圈儿
  • 4.将大蒜去皮,姜用刨刀去皮
  • 5.将大蒜去皮,姜用刨刀去皮
  • 6.转动切菜机,使得容器内的材料都变成小碎碎
  • 7.将辣椒等碎碎倒入大碗中,加入食盐
  • 8.倒入青红酒
  • 9.搅拌均匀
  • 10.取一无水无油的干净密封罐,将做好的剁椒酱装入密封罐中,腌制一周入味即可食用
