照烧鸡腿饭
可能不正宗,但味道确实不错,自己制作的照烧鸡腿饭,最起码吃着放心。

  • 鸡腿600克
  • 胡萝卜1根
  • 洋葱半个
  • 1棵
  • 5瓣
  • 白糖10克
  • 白胡椒粉1克
  • 椒盐2克
  • 生抽40克
  • 冰糖20克
  • 老抽4克
  • 蚝油20克
  • 蜂蜜10克
  • 低度白酒15克
  • 2片

Steps to make 照烧鸡腿饭

  • 1.鸡腿洗净去骨
  • 2.用竹签子或是叉子在鸡皮处扎一些眼,这样可以防止皮缩
  • 3.鸡腿翻过来鸡皮向下用刀背轻轻捶打,请不要省略此步,此步是为了肉质滑嫩,更加入味
  • 4.葱切段、蒜3瓣拍扁即可
  • 5.鸡腿肉入盆,加入葱段、蒜瓣、20克生抽、1克白胡椒粉、10克白糖、2克椒盐用手抓匀
  • 6.多抓一会,抓到所有液体调料吃进肉里,加盖腌制1-2小时
  • 7.先来熬鸡骨汤:鸡骨首先用冷水焯水,捞出,加入开水、葱、姜、洋葱大火煮开,小火约30分钟就可以得到鸡腿骨汤了
  • 8.再来准备配菜:胡萝卜洗净去皮切滚刀块,西兰花去根掰成小朵
  • 9.锅内加水、加盐、加几滴食用油烧开,下入胡萝卜煮2-4分钟
  • 10.加入西兰花煮至开锅,立马捞出入冷水过凉备用
  • 11..这个时候鸡汤也熬好了,来制作照烧汁:鸡汤过滤,取鸡汤约300克,加入生抽20克、冰糖20克、老抽5克、低度白酒15克烧开,小火慢慢熬,熬到剩下2/3的汁液关火,加入蚝油20克、蜂蜜10克搅匀
  • 12.不沾锅烧热,把鸡腿肉鸡皮向下放入,中小火煎制
  • 13.用中小火煎至鸡皮表面金黄,翻面
  • 14.同样煎至表面金黄,中途可以多翻几次,以达到成熟度一致。
  • 15.然后倒入照烧酱汁,转大火收汁,记得鸡腿中途要翻面
  • 16.最后汤汁收至略微浓稠,汁不要收干,这个汁浇在鸡腿和米饭上最好吃
  • 17.最后,鸡腿切块搭配米饭和配菜即可上桌
