  • 去核红枣30克
  • 玉米油50克
  • 太古红糖60克

Steps to make 红糖红枣戚风

  • 1.去核红枣分成2份:45克和30克,30克那份切碎备用。
  • 2.45克红枣加75克清水放搅拌机里打碎成枣泥备用。
  • 3.蛋白蛋黄分离,分别装入无油无水的容器里。
  • 4.红糖用勺背压碎。
  • 5.蛋白中加入几滴柠檬汁,倒入红糖。
  • 6.用电动打蛋器高速转低速打发至干性发泡,即提起打蛋器有直立的小直尖角。
  • 7.玉米油和打好的枣泥混合。
  • 8.倒入蛋黄搅拌均匀。
  • 9.筛入低筋面粉。
  • 10.用蛋抽搅打均匀至无干粉。
  • 11.取三分之一的蛋白霜到蛋黄糊里,用橡皮刮刀翻拌均匀。
  • 12.将拌好的蛋糕糊倒入到剩余的蛋白霜中。
  • 13.再加入切碎的红枣,翻拌均匀。
  • 14.将翻拌好的蛋糕糊倒入8寸圆模中,轻轻的晃动几下,再用力震几下,震出大气泡。
  • 15.送入事先预热好的烤箱下层,上下火150度,60分钟。
  • 16.烤好后戴上隔热手套将蛋糕模具取出,大力的将圆模在桌面震一下,再倒扣在烤架上,降温后即可脱模。
  • 17.切开看看。
  • 18.香甜的红枣味夹着红糖的香味,软软的,非常美味。
