Steps to make 凉拌白菜

  • 1.准备好白菜和配菜。
  • 2.取适量白菜,洗净后用刀从中间对半切开,方便食用。
  • 3.配菜洗干净,小米辣切圈,香葱和蒜头切末,放在一旁备用。
  • 4.接下来准备凉拌汁:碗中放入1勺半蒸鱼豉油,增加咸鲜味道,没有,也可以换成生抽酱油。
  • 5.然后放入1勺香醋,醋和蒜,都有开胃和杀菌的作用,为凉拌菜必备调料。
  • 6.1小撮食盐和1小勺白糖,中和酸咸味道,可以根据自家口味增减。
  • 7.再加大半勺辣椒油,增进食欲;能吃辣的可以多放些,味道更好。
  • 8.1小勺白芝麻和一半的葱末、蒜末,丰富口感。
  • 9.起锅烧油,油热后,把小米辣和余下的一半蒜末,用小火煸香。
  • 10.趁热倒入碗中,激发香豉香味道,搅拌均匀;此外熟蒜和生蒜混合,味道最香了。
  • 11.不用洗锅,直接加适量清水,烧开后放入白菜,利用锅边的少许余油焯烫下白菜,油亮又爽口。
  • 12.焯至白菜断生变软,捞出,沥干水分,摆入盘中;焯烫时间不要过久,差不多40秒~1分钟左右即可。
  • 13.接着把调好的凉拌汁,淋在白菜上面。
  • 14.最后撒上葱花点缀提香,一道家常版的凉拌白菜就做好了。
  • 15.吃上一口,香辣咸鲜,还带着点酸甜的味道,爽口下饭,非常地好吃。
