  • 1.准备好全部食材,首先用冷水把蹄髈浸泡少许。
  • 2.准备一锅清水,加入盐、料酒煮沸,下蹄髈简单焯下水,再用冷水冲洗干净。
  • 3.再次准备一锅清水,蹄髈冷水下锅,加入生姜、八角、花椒、酱油、胡椒粉、桂皮。
  • 4.大火煮至汤水完全沸腾,加入豆瓣酱、蚝油、洋葱、冰糖。
  • 5.盖好盖子,转小火炖煮60分钟左右。
  • 6.然后送入蒸烤箱,选择蒸模式,100度90-120分钟。
  • 7.起锅热油,加入少许冰糖,小火熬至金褐色,加入过筛后汤水,色深浓稠气泡后关火。
  • 8.淋到蹄髈上,再撒上点熟白芝麻,就可以上桌喽!
