中秋那段时间天天折腾月饼,冰皮月饼相对健康,也比较符合自己的口味,软糯,不腻,冰完后还有些QQ的感觉,超棒,对于怕胖的和爱吃糯米类的人群来说,这款月饼最适合不过了。冰皮月饼的配方各式各样,之前试过好几个配方,不知道是我保存不当还是配方不大好,当天没吃完的月饼第二天饼皮就硬了,最后在电视上发现了这个配方,还比较满意

  • 粘米粉50克
  • 澄粉30克
  • 牛奶180克
  • 25克
  • 植物油20克

Steps to make 冰皮月饼

  • 1. 将所有粉类放一起搅拌均匀
  • 2.一点点加入牛奶,这样不易结块,(我用筛网过滤了遍,一点小颗粒都不放过,这步可省略)搅拌均匀后加入油
  • 3.水开后上锅蒸25分钟左右
  • 4.蒸熟的面糊,表面有油脂,属正常现象,一会揉面团时油脂就进入面团里了
  • 5.面团凉凉,不觉得烫的时候就可以揉面团了
  • 6.分些面团出来加入抹茶粉,这个就按自己喜好咯
  • 7.家里就剩可可粉和抹茶粉了
  • 8.提前准备的豆沙馅,既然自己动手,能自己做的就自己做,健康,放心
  • 9.取一饼皮,放入豆沙馅(皮与馅比例,3;2)
  • 10.包好收口,在炒熟的糯米粉里滚一圈,面团上沾满熟糯米粉即可
  • 11.模具内撒入少量炒熟的糯米粉,防粘,将面团放入模具时收口朝底部,放台面上,一手固定住模具,一手将模具把手稍微用力按压几下,再将月饼轻轻往下推即可,试试就会,很容易的
  • 12.这是我最爱的兔兔模具,冷藏后一小时口感最好
