家常扣肉
扣肉,很多人都喜欢吃,不过,其中炸肉的步骤却令很多人望而却步。其实现在市场上有很多半成品卖的,很多时候,买初加工的食品回来,再根据自己的喜好进行烹调,也是一种简单快捷的方法。

        今天做的这个家常扣肉,用的就是炸好的扣肉,是来自广西的土猪肉,这样,就不用自己搞的厨房油花四溅了。配上一些广东惠州的咸梅菜,味道相当不错。

Steps to make 家常扣肉

  • 1.准备好一块炸好的五花肉。
  • 2.取咸梅菜适量
  • 3.将扣肉切成方块,不过,底部让它有点连接。
  • 4.切好的扣肉皮朝下放于盘子上。
  • 5.梅菜用清水浸泡一会儿,让它咸味去掉一部分,然后切碎。
  • 6.将锅烧热,不用加油,把切好的梅菜入锅炒香。
  • 7.梅菜炒出香味后,加适量的水,一点点淡生抽和老抽、白糖、姜、八角等,大火烧开。
  • 8.弄好后的梅菜倒入扣肉的盘子里。
  • 9.将扣肉置于蒸笼,中火蒸一个小时。
  • 10.蒸好的扣肉先将汁液倒出,将盘子反扣装盘。
  • 11.将盘子去掉
  • 12.将蒸肉的汁入锅用水淀粉勾芡。
  • 13.将勾芡的汤汁淋在扣肉上面,再围点生菜,这道菜就做好了。
