枣泥山药糕
枣泥山药糕是《红楼梦》中一款美食,为秦可卿病中所服之滋补品。枣泥山药糕易于消化,味道清甜,而红枣可以补气血,山药可以健脾胃,对可卿这些病中之人,是不错的补养小食。
今天照着方子试做了一下,简单易行,且滋补健康,低糖少油,看来今后得在传统中点方面用下功了!山药问了下卖菜的师傅,他给推荐的铁棍山药,说是蒸出来面。的确如此!枣泥我是提前做好的,就是枣子虽香但是出泥率较低,费些功夫!将肉厚的和田大枣洗净,加少许水上屉蒸熟,去核去皮,过筛,用少许色拉油炒制,可以加适量麦芽糖,我大体是凭经验,没称重,喜欢枣泥的亲们可以搜个方子自己操作下。

Steps to make 枣泥山药糕

  • 1.准备材料
  • 2.山药削皮切段,上屉蒸熟
  • 3.将蒸好的山药碾碎过筛
  • 4.把过筛的山药泥,用厚屉布包裹,加少许糖,像揉面一样反复揉搓成山药面团
  • 5.揉好的山药面团
  • 6.枣泥加入适量洗净的桂花,捏成团,和山药泥一起分等分,枣泥20克一份,山药泥30克一份(约13份左右)
  • 7.将山药泥捏薄饼,包裹枣泥团,收口团圆
  • 8.放入50克的月饼模具中,将四边压实
  • 9.挤出成型,可将模具轻掸少许粟粉作薄面,以免粘模
  • 10.摆到盘中即可,可配糖桂花食用
