板栗米酒鸭
初秋正是板栗飘香的时候,趁着新鲜拿来煮着吃、配菜吃、炒着吃,不管怎么吃,那就一个字——香。
今天带来的是板栗米酒鸭。

Steps to make 板栗米酒鸭

  • 1.鸭子洗净斩块,放入加了米酒的开水中焯2分钟,沥干水分;
  • 2.准备米酒一碗(自酿的,约150毫升);
  • 3.板栗入开水中烫着,一个一个拿出来剥去皮,搓成两半;葱、姜、蒜、干红辣椒、八角、桂皮准备好;
  • 4.炒锅上火倒油烧热放入葱姜等爆香,随后放入鸭肉翻炒片刻;
  • 5.接着倒入老抽、醋、糖、盐、米酒、水,翻匀,盖上盖子烧开,转小火烧40分钟;
  • 6.约40分钟后加入板栗和蒜瓣,炒匀,盖上盖子再烧20分钟;
  • 7.汤汁浓稠时调入味精即可。
