自制剁椒
剁椒味辣而鲜咸,口感偏重,剁辣椒是湖南的特色食品,可出坛即食,也可当作佐料做菜。剁椒是用红尖椒剁碎了以后加盐、大蒜、生姜拌匀,放大缸里腌一段时间,就成了色香味俱全、生物保鲜、不含防腐剂的纯天然绿色食品。
美味的剁椒鱼头、剁椒皮蛋、剁椒芋头都离不开它。现在红辣椒上市,喜欢吃剁椒的朋友不妨自己做一点。而且原料都是常见的食材,很方便购买,做起来也非常容易。

我和老公都非常喜欢吃辣,当然也非常喜欢剁椒,所以这次自己做了一点存起来慢慢吃。

  • 大蒜50g
  • 生姜20g
  • 高度白酒两勺
  • 45g
  • 白糖10

Steps to make 自制剁椒

  • 1.原料备用。
  • 2.将红尖椒清洗干净,彻底沥干表面水分。
  • 3.大蒜去皮,清洗干净,也沥干水份。
  • 4.晾干水份的辣椒去蒂。
  • 5.菜板和刀具提前消毒,确保无油无水,辣椒用刀剁碎,不用剁得太细。
  • 6.生姜和大蒜剁成碎末。
  • 7.将剁好的辣椒、大蒜、生姜末放入一无油无水的大容器内,加入盐、糖。
  • 8.充份搅拌均匀.
  • 9.储存剁椒的容器清洗干净,放入开水锅内消毒后沥干瓶内的水。
  • 10.拌好的剁椒放入放凉的容器内。
  • 11.装好后淋入白酒。
  • 12.密封放在阴凉通风的室温中一晚,使其发酵,然后放入冰箱中冷藏保存一周左右即可。
