【水晶虾饺】

  • 沸水130ml

  • 木耳一把
  • 胡萝卜1块
  • 青椒半个

Steps to make 【水晶虾饺】

  • 1.(一)馅料准备:1.洗净虾仁(如果是大虾,洗净去头去皮,去虾线),取2/3放入碗中,调入少许盐、料酒,加入姜丝葱蒜,拌匀腌制片刻;
  • 2.剩余的虾仁用刀背剁成虾肉蓉,备用;
  • 3.把猪肉(肥多瘦少)剁成肉糜备用;
  • 4.香菇洗净剁成碎丁备用
  • 5.木耳切碎备用;
  • 6.胡萝卜切碎备用;
  • 7.青椒都切碎备用;
  • 8.小葱切碎、姜切末
  • 9.将所有的东西放入盆中,调入少许料酒和、盐和糖、鸡粉、顺同一方向搅匀上劲;
  • 10.(二)和面包制:准备好澄粉和生粉。
  • 11.将澄粉、生粉、少许盐混合拌匀,冲入沸水,边加边搅拌,到没有干粉的状态,盖上盖闷5分钟。
  • 12.加入猪油,和成光滑的面团。
  • 13.把面团揉成长条,切成小剂子。
  • 14.将小剂子按扁, 擀成薄片。(最好是包着保鲜膜来擀,以防粘连)
  • 15.取一块面皮,填入适量虾泥馅,再包入一个虾仁,捏成饺子状;
  • 16.依次包好后放在铺有保鲜膜的案板上;
  • 17.锅中垫上切好的胡萝卜片(防止粘锅),在垫片上依次放好虾饺;
  • 18.入开水锅蒸5分钟即可。
