  • 1.酵母2克加入温水8克,提前5分钟放入面包机,让酵母活化。把高筋面粉200克、白砂糖20克、盐2克、全蛋液25克、淡奶油35克、冰水75克,全部放入面包机,开始揉面。
  • 2.先揉至出不完全膜。
  • 3.加入室温软化完全的无盐黄油20克,继续开机器揉。
  • 4.揉至出薄薄的面包膜。
  • 5.然后稍微揉圆一下,放在盆里。
  • 6.包上湿布,让其发酵。
  • 7.发酵到2倍大,夏天发酵时间在一小时左右。
  • 8.取出发酵好的面团,揉一下排气,把面团分成8份。
  • 9.全部揉圆。
  • 10.包上保鲜膜,盖上湿布、让面团松弛10分钟左右
  • 11.取一个面团,先排气折叠。
  • 12.再揉圆后放在烤盘上。
  • 13.烤箱不要开,放入面团,放一碗热水进去,帮助发酵。
  • 14.等面团发酵至1.5倍大以后,撒一层薄薄的玉米淀粉,放入烤箱。
  • 15.烤箱160℃提前预热,烤制13-15分钟。烤好以后,取出来放凉备用。
  • 16.我们接着来做抹茶奶油馅料,把淡奶油80克、白砂糖8克、抹茶粉2克,全部放一起开始打发。
  • 17.打发至抹茶完全融化,呈8分发泡的状态即可。装入裱花袋。
  • 18.去掉抹茶粉就是原味馅料,抹茶粉还可以换成8克的可可粉,做可可馅料。
  • 19.用筷子360°转一圈、里面弄成中空。
  • 20.把打发好的奶油挤入面包里。
  • 21.爆浆冰面包、完成。
