Steps to make 糖醋鱼

  • 1.鱼去鳞去腮去内脏洗净。
  • 2.用刀在鱼身上大约隔3厘米左右向下切半厘米,然后向鱼头方向斜切一刀。
  • 3.在鱼身上及腹腔均匀地抹上料酒、胡椒粉和适量盐,加上葱丝姜片,腌制20分钟。
  • 4.胡萝卜切小丁,蒜薹切5毫米左右的段。
  • 5.将淀粉加水调成淀粉糊,淀粉糊不要太稀,不然挂不住糊。将淀粉糊用手抹在鱼身上,切开的地方也要抹到。
  • 6.锅内烧热油,7成热的时候一手拎着鱼尾巴,一手用勺子将油浇在切花刀的地方,直到鱼肉外翻定型。
  • 7.将鱼放入锅中,小火炸至鱼熟。尽量不要翻面,防止鱼折断,可以用勺子将热油不断浇在鱼的上面。
  • 8.调高油温,将鱼再次放入锅中大火炸一下,将外皮炸酥后放入盘中。
  • 9.锅内留少许油,将蔬菜丁下入翻炒一下。
  • 10.将番茄酱放入锅内略炒,倒入适量开水,加入糖、醋和适量盐。
  • 11.糖醋汁烧开后加入适量的水淀粉烧至浓稠,可以稍加一些熟油使汤汁油亮。
  • 12.将糖醋汁均匀地浇在鱼身上即可。
