鲅鱼馅水饺,孩子老姨夫从大连买的给拿来的,包了真鲜。鱼肉用小勺刮,老赵处理的,馅加葱姜花椒水搅打上劲儿,加点肥猪肉馅,加个蛋清,料酒,葱姜碎,胡椒粉,香油,鸡精,油,盐,蚝油,生抽拌匀后,加一点韭菜去腥。

Steps to make 鲅鱼水饺

  • 1.鲅鱼洗净,去掉头尾和内脏再洗净,用刀把鲅鱼从中间切成两片。
  • 2.用小勺刮出肉糜。
  • 3.花椒水煮一会,葱段姜片,八角放入泡出味道,韭菜洗净,葱姜切碎备好一会拌入馅料。
  • 4.加点肥猪肉。
  • 5.加蚝油,料酒,花椒粉,胡椒粉,香油,生抽,鸡精,花椒水,盐拌匀。
  • 6.加个蛋清和匀。
  • 7.加葱姜碎,油和匀。
  • 8.面团和好盖保鲜膜醒半小时。
  • 9.韭菜切碎。
  • 10.放入韭菜再放点油再次拌匀。
  • 11.包好水开下锅煮7分钟左右。
  • 12.盛出。
  • 13.鲜。
