【焦糖奶油布丁】

  • 动物性淡奶油55克
  • 牛奶145克
  • 香草豆荚1/4个
  • 冷水20克
  • 白糖30克
  • 开水10克
  • 鸡蛋1个
  • 蛋黄1个
  • 朗姆酒1/4小匙

Steps to make 【焦糖奶油布丁】

  • 1.白糖和冷水一起倒入锅内,不要动锅,小火加热至周围浮现焦糖色
  • 2.转动锅,使其受热均匀,慢慢熬煮成粘稠的,闻起来有苦涩味,色泽变深的焦糖液,迅速加入开水搅拌均匀(注意加入开水时受热可能会外溅,小心不要被烫伤)
  • 3.将焦糖液快速倒入模具内,待至凝固
  • 4.牛奶,淡奶油倒入锅内,把香草豆荚籽加入到牛奶中,豆荚也一起放入,小火至快煮沸状态关火,取出香草豆荚不要
  • 5.鸡蛋和蛋黄打散成蛋液
  • 6.慢慢加入到牛奶中(分次加入,每次待搅拌均匀后再加入下一次)
  • 7.搅拌混合均匀成布丁液,过筛两次
  • 8.加入朗姆酒搅拌均匀
  • 9.将布丁液倒入到冷却凝固的焦糖里,放入烤盘,在烤盘中注入2CM高的开水
  • 10.烤箱预热,中层150度40分钟左右,待凉却后入冰箱冷藏再脱模食用
