Steps to make 六寸戚风蛋糕

  • 1.食材备用。
  • 2.牛奶,食用油称重。
  • 3.搅拌成乳化状态。
  • 4.加入蛋黄和18克白糖搅拌均匀。
  • 5.低筋面粉称重。
  • 6.过筛。
  • 7.用硅胶勺按压至无干粉状态。
  • 8.蛋白里边滴几滴柠檬汁。
  • 9.分三次加入35克白糖,打发至提起有尖尖角。
  • 10.取一份蛋白霜放入蛋黄糊糊中翻拌均匀。
  • 11.再倒回蛋白霜中翻拌。
  • 12.快速翻拌均匀,之后倒入模具中,震几下放入烤箱中下层,140度上下管烤40分钟,再转150度烤10分钟。
  • 13.烤好取出震两下倒扣晾凉。
  • 14.再脱模。
