南瓜黄桃夹心蛋糕

  • 白糖(蛋白)40g
  • 白糖(蛋黄)10g

Steps to make 南瓜黄桃夹心蛋糕

  • 1.南瓜去皮蒸熟,在料理机中打成泥。
  • 2.蛋黄蛋白分开,放蛋白的盆要干净无油无水。
  • 3.蛋黄、米糠油、白糖放在一起,用手动打蛋器搅匀。
  • 4.放入南瓜泥拌匀。
  • 5.筛入低筋面粉。
  • 6.用Z字型手法拌匀成顺滑蛋黄糊。
  • 7.蛋白中加几滴白醋,打发蛋白,分三次加入白糖,打发至湿性发泡(提起打蛋头,蛋白能拉出大弯钩状态)。
  • 8.取三分之一蛋白霜放到蛋黄糊中,用不规则手法拌匀。
  • 9.搅匀的蛋糕糊倒入蛋白霜中。
  • 10.用上下翻拌的手法拌匀。
  • 11.蛋糕糊倒到铺了油纸的蛋糕模里,在桌上摔几下震出大气泡,表面尽量抹平。
  • 12.放到预热好的烤箱中,中下层、上下火150度,30分钟。
  • 13.烤好的蛋糕倒扣在烤架上。
  • 14.撕去油纸晾凉。
  • 15.提前做好的黄桃酱。
  • 16.蛋糕稍冷却后翻面,上面抹上黄桃酱。
  • 17.切大条。
  • 18.叠起,切成小块。
  • 19.香甜喧软的夹心蛋糕。
