豆沙月饼
中秋节对我家有特别的意义,所以月饼是一定要有的。手头上没有鸭蛋黄,于是改用红豆沙做馅儿。豆沙馅儿是我之前做好冻起来的,解冻一下又加了些熟糯米粉就成了。

  • 转化糖浆60克
  • 枧水1克
  • 食用油20克
  • 中筋面粉83克
  • 吉士粉2克
  • 豆沙馅250克
  • 蛋黄1个
  • 蛋白1汤匙
  • 清水1汤匙

Steps to make 豆沙月饼

  • 1.茶匙食用碱加4茶匙清水,调成枧水
  • 2.将1克枧水与转化糖浆混合均匀,再加入食用油,搅拌均匀
  • 3.筛入吉士粉和中筋面粉
  • 4.揉成面团,放入食品袋中,冰箱冷藏一小时
  • 5.我用的是100克的模具,豆沙馅分成62克每个,饼皮分成38克每个
  • 6.取一份饼皮,放上豆沙馅,轻轻推着饼皮往上逐渐收口
  • 7.收口后搓成圆球
  • 8.在面粉里滚一下,拍去多余面粉
  • 9.放入模具中
  • 10.将边角稍微整形一下
  • 11.在案板上压出花样
  • 12.依次做好所有的月饼之后,表面喷水,防止烤的时候开裂
  • 13.蛋黄,蛋清和清水调匀。烤箱预热190度,中层上下火烤8分钟
  • 14.取出后,表面刷蛋液,再继续烤10-12分钟,中间要再刷一次蛋液
