香橙慕斯蛋糕-QQ糖版
一般来说,我们做慕斯蛋糕会使用吉利丁片或者鱼胶粉,这些都是在烘焙中比较常见到的材料;但是如果没有呢?还有个方法,可以使用QQ糖。

材料:
蛋糕体:鸡蛋4个,细砂糖80g,低筋面粉60g,玉米油20g,牛奶30g
慕斯糊:淡奶油200g,糖粉20g,开水60g,香橙味QQ糖70g
果冻层:香橙味QQ糖210g,开水180g,牛奶60g

Steps to make 香橙慕斯蛋糕-QQ糖版

  • 1.4个蛋黄中加入10g糖搅打均匀
  • 2.加入20g玉米油继续搅打均匀
  • 3.加入30g牛奶搅打均匀
  • 4.筛入低筋面粉
  • 5.拌匀
  • 6.4个蛋白中分次加入70g糖打发
  • 7.挖取一部分蛋白倒入蛋黄糊中
  • 8.翻拌均匀
  • 9.再倒回至蛋白盆中
  • 10.继续翻拌均匀
  • 11.倒入不粘烤盘中,表面用刮板刮平
  • 12.轻摔几下后送入预热好的烤箱中层,180度约20分钟
  • 13.出炉晾凉(不必倒扣)
  • 14.凉后脱模倒扣到油纸上
  • 15.用切模压出所需形状
  • 16.找好底盘,将切好的蛋糕片和切模一起放好备用
  • 17.QQ糖70g和开水60g混合搅匀,使糖融化在水中,晾凉备用
  • 18.淡奶油200g中加入糖粉20g,隔冰水打至6~7分发
  • 19.分次加入QQ糖水
  • 20.继续搅打均匀,慕斯糊就做好了
  • 21.向垫好蛋糕片的切模中倒入慕斯糊(注意不要倒满,留出约1/3高度的空间),然后送入冰箱冷藏至少4小时
  • 22.另取QQ糖210g融入180g开水中,晾凉
  • 23.倒入60g牛奶
  • 24.搅拌均匀就是果冻液
  • 25.取出冷藏定型好的慕斯蛋糕,倒入果冻液至满,然后继续送入冰箱冷藏至凝固,脱模即可食用
