酸甜可口的荔枝肉
荔枝肉,是福州传统名菜,起自清初,已有二三百年历史,因色、形、味皆似荔枝而得名。此菜色泽带红,形似荔枝,质地脆嫩,酸香味佳,酸甜可口。

  • 荸荠100克
  • 淀粉10克
  • 番茄酱50克
  • 白醋5克
  • 20克
  • 2克
  • 料酒1勺
  • 味精3克

Steps to make 酸甜可口的荔枝肉

  • 1.将里脊肉洗净,切成大厚片
  • 2.再剖上十字花刀。
  • 3.然后再改切为小片。
  • 4.蹄切小块,每粒2~3 块。
  • 5.马蹄块与肉片一起用湿淀粉和盐 料酒腌制上浆。
  • 6.番茄酱、白醋、白糖、味精、水、湿淀粉调卤汁待用。
  • 7.将上好浆的肉片卷起来做成荔枝状。
  • 8.锅中放肉烧热, 倒入上浆的肉片和马蹄,用勺扒散。
  • 9.炸至金黄熟透,捞出,控干油分。
  • 10.锅留油油,下入葱碎,煸一下。
  • 11.倒入碗汁烧开,至粘稠。
  • 12.倒入炸好的荔枝肉翻炒均匀即可。
