麻辣十三香小龙虾
武汉当季最热的虾子菜莫过于此啦!虽然调料有点不全,不过好在虾子够新鲜,家常待客绝对是够了,相信这里很多朋友闭着眼睛都会做。恩,就算你们闭着眼睛都会,我还是要发给你们看,谁让这是武汉最热门的小龙虾呢?

  • 清水小龙虾1000克
  • 花椒30克
  • 干辣椒25克
  • 30克
  • 生姜20克
  • 30克
  • 啤酒2~3罐
  • 甘草10克
  • 白芷10克
  • 孜然10克
  • 肉蔻5克
  • 桂皮1根
  • 香叶几片
  • 八角2个
  • 香辣酱1大匙
  • 生抽2汤匙
  • 老抽1汤匙
  • 1汤匙
  • 冰糖10克
  • 5克

Steps to make 麻辣十三香小龙虾

  • 1.主要材料备齐;
  • 2.小龙虾用刷子刷洗冲净,根据烹饪习惯抽取虾线或剪去虾须虾枪,这步我没有做,因为这次吃虾的朋友有特殊要求,要完整。当然,品质上乘的清水小龙虾刷洗干净也可以直接烹饪了;
  • 3.菜籽油清凉解毒,比起猪油和色拉油我选用了菜籽油。锅中倒入足够的菜籽油烧热后,先放入花椒和干辣椒煸出红油,捞出后下葱姜蒜爆香,再依次放入甘草、白芷、孜然、肉蔻、桂皮、香叶、八角爆香;
  • 4.倒入洗净的小龙虾,大火翻炒至虾身红亮;最好用大点的炒锅哦;
  • 5.接着在翻炒均匀的虾中倒入2~3罐啤酒,至没过虾身即可;
  • 6. 在这个步骤倒入适量十三香调料,一大勺香辣酱,并调入少许冰糖、适量生抽、老抽、盐和少许的醋;调好味后,大火烧开转中火煮12分钟;
  • 7.最后加入青椒和洋葱提味,待青椒和洋葱煮至断生后,根据个人对麻辣味和咸淡的喜好进行调味。
  • 8.最后翻匀,大火收汤即可。
