自制酸豆角
天气渐热,饮食清淡,偶尔也想做些酸爽、酸辣的菜祭奠一下自己的胃口,这个简易版制作的酸豆角,优点就是一次不用做很多,每次做一两斤就可吃上几顿,相对泡一缸子盐水腌制法时间要短,简单易上手,随做随吃。

Steps to make 自制酸豆角

  • 1.豆角放入清水内,加一勺食盐浸泡一会。
  • 2.浸泡洗净后的豆角控干水分(要尽量控干生水)。
  • 3.控干水的豆角切粒,切好放入无水无油的盆里。
  • 4.切粒的豆角加入食盐(尽量多一些,确保入味)。
  • 5.把加了盐的豆角粒拌匀。
  • 6.准备玻璃罐,无水无油擦干净。
  • 7.然后把拌匀的豆角粒装入玻璃罐内,不要装太满,在瓶颈处即可。
  • 8.用无水无油的碟子盖住瓶口。
  • 9.接着倒过来,在碟子中加入少许饮用水/凉白开(不能是水龙头的自来水),没过玻璃瓶口即可。
  • 10.接下来每天换一次水,按住玻璃瓶身把水倒掉再添一些饮用水。
  • 11.两斤的豆角装了三瓶,每天换水哦。
  • 12.放通风处天气热时约5天翠绿的豆角就会变淡黄色,说明腌的差不多了,就可倒掉水开罐倒出了。
