  • 1.鱼头买来收拾干净,鱼头从鱼背开刀,用手拍刀背劈开鱼头,鱼背上斩几刀便于入味。

  • 3.用姜片,葱段和料酒将鱼头腌制10分钟
  • 4.蒜切碎,葱段切碎。小火起锅,倒入少量花生油。
  • 5.爆香葱和蒜末,加入剁椒和耗油,炒出香味,关火备用。
  • 6.鱼头捡去葱姜,倒掉腌制的汁水。蒸盘以姜片葱段垫底,摆好鱼头,将炒制的剁椒均匀盖在鱼头上。
  • 7.蒸锅上汽后放入鱼头,大火蒸8分钟,关火2分钟后取出。
  • 8.同时将面条煮上
  • 9.将蒸好的鱼头上撒上葱花,锅内倒入油烧热,冒青烟的时候离火
  • 10.浇在鱼头上,会听到滋啦滋啦的声音。
  • 11.将面条拌在鱼头周围即可。上桌!好吃的不得了!
