菠萝肉松面包

Details of ingredients

  • 水+鸡蛋190g
  • 30g
  • 3g(1/2小勺)
  • 白砂糖50g
  • 高筋面粉300g
  • 酵母粉3g(1小勺)
  • 黄油60g
  • 白砂糖100g
  • 鸡蛋25g
  • 低筋面粉150g
  • 泡打粉2小勺(4g)
  • 沙拉酱适量(装饰用)
  • 肉松适量(装饰用)

Steps to make 菠萝肉松面包

  • 1.所有制作面包体的材料都放进面包桶内,选择发面团功能,将面团揉好并发酵2倍大;
  • 2.把发酵好的面团取出,分成40g重量的小面团,揉圆并盖上保鲜膜醒发20分钟;
  • 3.把醒发好的面团用擀面杖擀成如图的椭圆形;
  • 4.把擀好的面包胚排入烤盘进行最后发酵;
  • 5.在面包胚发酵的过程中制作菠萝酥皮:黄油和糖一起用打蛋器搅拌均匀,微微打发;
  • 6.加入鸡蛋液继续搅拌至黄油颜色变浅白色,能拉出如图所示的尖角;
  • 7.筛入低筋面粉和泡打粉搅拌成无干粉的菠萝酥皮面团,醒发15分钟;
  • 8.取一小撮酥皮面团,约20g;
  • 9.用刀面拖拍成薄薄的面片,用刀削起;
  • 10.把面片均匀的盖在发酵好(原来刚发酵的2倍大)的面包胚上;
  • 11.均匀的刷上蛋黄液,进180度预热好的烤箱,上火180度,下火160度,烘烤约15至20分钟;
  • 12.等烤好的面包放凉后,用牙刀把面包从中间割开,但不割断;
  • 13.把适量的肉松切碎;
  • 14.把适量的沙拉酱涂在面包的底面上,用于黏合;
  • 15.在黏合的面包顶侧部均匀的涂上沙拉酱,并粘上一层肉松;
  • 16.制作完成的菠萝肉松面包成品
