Steps to make 肉夹馍

  • 1.准备好面粉,加入酵母和糖。
  • 2.倒入150克温水。
  • 3.搅拌均匀。
  • 4.搅拌成大面絮。
  • 5.加入15克食用油。
  • 6.下手揉成一个光滑的面团,盖上保鲜膜,室温发酵至两倍大(现在天气热,室温就可以发酵)。
  • 7.趁着面团发酵的时间,我们来准备夹馅的肉,猪肉清洗干净,切成大块,加姜片和料酒焯水,过凉水,清洗干净浮沫(可以参考红烧肉菜谱的做法)。
  • 8.起锅烧热,加油,油四成热时。
  • 9.下入冰糖熬糖色。
  • 10.糖成微黄色时。
  • 11.下入猪肉块,翻炒均匀。
  • 12.加入盐和所有的香料,翻炒均匀。
  • 13.加入干辣椒,翻炒均匀后,加入没过肉肉的水,大火煮开,转中小火,加蚝油、生抽、老抽调味,炖煮40分钟。
  • 14.时间结束后,加入鸡精,转大火收干汤汁,挑掉香料和辣椒不要,盛出待用。
  • 15.准备好梅干菜,清洗干净,提前泡一个小时。
  • 16.拽干水分。
  • 17.起锅烧热,加油,油七成热时。
  • 18.下入梅干菜翻炒断生,炒出香味。
  • 19.加入刚刚炖好的肉肉,翻炒均匀。
  • 20.加盐、鸡精、蚝油、生抽调味,稍煮一会儿。
  • 21.青椒和大蒜头都切成末。
  • 22.加入锅中。
  • 23.翻炒均匀,盛出。
  • 24.肉肉切成末。
  • 25.切成末。
  • 26.装入碗中待用,夹馍的肉肉就准备好了。
  • 27.面团也发酵好了(一个小时左右)。

  • 37.放在案板上。
  • 38.用手压平。
  • 39.擀成10cm左右的圆面片。
  • 40.依次全部做完,盖上保鲜膜,再次室温松弛20分钟。
  • 41.取出电饼铛预热,不用放油,发酵好的面片,直接放入电饼铛,盖上锅盖,烤熟。
  • 42.一面煎2分钟。
  • 43.翻面,再煎2分钟就好了。
  • 44.起锅,馍馍就好了。
  • 45.取出一个馍,对半切开,一端不要切断哦。
  • 46.中间放入足够多的肉肉。
  • 47.肉夹馍就好了。
