腊肠煲仔饭
煲仔饭是源于广东地区的特色美食,属于粤菜系,通常把淘好的米放入煲中,量好水量,加盖,把米饭煲至七成熟时加入配料,再转用慢火煲熟。这次用到黑乐的砂锅做煲仔饭,在火候控制方面比较灵活,煲出来的饭也较为香口,齿间留香,回味无穷。吃煲仔饭时,记得尝尝饭焦的锅巴味道,又香又脆。

  • 生姜1小块
  • 老抽少许
  • 白糖少许
  • 少许
  • 蚝油少许

Steps to make 腊肠煲仔饭

  • 1.大米洗净,然后放适量水,提前浸泡半小时左右。
  • 2.香肠如果是冷冻的,提前解冻后最好用水煮一下,姜切成丝备用。
  • 3.取一只小碗,将生抽、老抽、蚝油、糖、油、盐、凉白开,调制成汁备用。
  • 4.砂锅洗净后,用刷子蘸取少量油,刷满整个砂锅。将浸泡过的米,放入锅中,加入适量水,盖上盖子,大火烧开。
  • 5.与此同时,另烧一锅清水,滴入几滴油,将青菜洗净后焯水捞出。
  • 6.大火焖煮大约一分钟,然后转小火,煮至表面汤汁逐渐收干。
  • 7.然后将姜丝撒上,再依次码上香肠和青菜,最后在中间位置打入一个鸡蛋,盖上盖子继续小火焖煮。
  • 8.带汤汁完全收干,香肠和鸡蛋都熟了,最后浇上酱汁,拌匀即可食用。
