腊肉辣椒炒粉条
天一凉人就馋,而且胃口还特别好。前几天吃了一顿辣椒炒腊肉,还不时咂么滋味,今天应家人的要求又炒一盘,但同样的菜不能挨得太近吃,否则就失去了新鲜感,于是我加了一把粉条,2朵香菇,这样不但和前几日的那道菜有所区分,在营养上也更加丰富了。

  • 红辣椒1个
  • 山药粉条1把
  • 香菇2朵
  • 大蒜4瓣
  • 10克
  • 热水半碗
  • 酱油20克

Steps to make 腊肉辣椒炒粉条

  • 1.材料准备好:青红辣椒、鲜香菇清洗干净;腊肉一块,粉条一把;
  • 2.腊肉入凉水锅中,水开后煮15分钟,经过这样的处理可去除掉腊肉表面的污渍,去除多余的盐分,最重要的是能使腊肉不干硬,香润不腻;
  • 3.粉条剪成15公分左右的段,用凉水浸泡变软;
  • 4.青红辣椒带籽切细丝;香菇切粗条,香菇柄质地较硬、纤维较长,可切细丝;
  • 5.煮好的腊肉带皮切成厚约4毫米的粗条,大蒜剁碎;
  • 6.炒锅中倒少许油,油4、5成热时,将辣椒、香菇、腊肉同入锅;
  • 7.中大火翻炒至辣椒全部变软;
  • 8.淋适量酱油增加鲜味和咸味,再倒半碗热水;
  • 9.泡软的粉条入锅,迅速翻拌,使粉条能充分吸收汤汁变软入味;
  • 10.起锅前倒入大蒜碎,稍加混合即可出锅。
  • 11.腊肉辣椒炒粉条,越吃越香,倍儿下饭!
