Steps to make 爱冰皮月饼

  • 1.牛奶185克,糖粉 50克,玉米油 20ml,放入盆中搅拌均匀
  • 2.倒入糯米粉45克,粘米粉 35克,澄粉 20克,搅拌成米糊
  • 3.搅拌好的米糊静置30分钟,然后大火蒸15-20分钟,蒸熟即可
  • 4.蒸熟后用筷子快速搅拌成顺滑的面团,冷却
  • 5.放入冰箱冷藏1-2小时就不粘手,揉成光滑的面团
  • 6.紫薯蒸熟后压成紫薯蓉
  • 7.放入不粘锅中,小火,放入白糖,清水,玉米油 翻炒均匀,出锅冷却
  • 8.搅拌均匀,能捏成紫薯球即可
  • 9.将冰皮和紫薯蓉按30克比20克的克重称重,团圆
  • 10.手心摁扁冰皮,放入紫薯球
  • 11.用冰皮把紫薯球包住,推裹
  • 12.封口团圆
  • 13.放入月饼模具中,注意模具中要放入少许糕粉防粘
  • 14.压出月饼,冷藏密封保存3天
  • 15.装好包装盒
