南熘鱼片

Steps to make 南熘鱼片

  • 1.将草鱼治净切片,加1茶匙料酒拌匀(切鱼片的方法http://home.meishichina.com/recipe-8205.html)。
  • 2.将一个鸡蛋打散打匀,蛋液里加淀粉和面粉,比例是2:1,打匀;再放入少许盐和苏打,打匀。
  • 3.将调好的鸡蛋糊与鱼片混合,腌制备用。
  • 4.将3大勺番茄酱、2大勺醋和1大勺半白糖混合(醋和糖的量可以根据自己的喜好定),调成番茄糖醋汁备用。
  • 5.锅里放适量油(能没过鱼片即可),烧热,将火调小,将鱼片一片一片地放入炸,鱼片全部放入后将火调至中火继续炸。
  • 6.鱼片炸至表面金黄捞出晾凉。
  • 7.将晾凉的鱼片再次放入油锅复炸一次。
  • 8.炸至表面微焦、酥脆,捞出备用。
  • 9.炒锅留少许油,将调好的番茄糖醋汁倒入翻炒。
  • 10.再倒入鱼片翻炒均匀。
  • 11.糖醋汁均匀裹在鱼片上,加少许水淀粉勾芡即可。
