紫米馒头
紫米中含有丰富蛋白质、脂肪、赖氨酸、核黄素、硫安素、叶酸等多种维生素,
以及铁、锌、钙、磷等人体所需微量元素,
紫米中的膳食纤维含量十分丰富,
膳食纤维能够降低血液中胆固醇的含量,
有助预防冠状动脉硬化引起的心脏病,
有滋阴补肾、健脾开胃、补中益气、活血化淤等功效。

Steps to make 紫米馒头

  • 1.酵母先用清水泡一会,再放入面粉、紫米粉,活成软硬适中的面团,
  • 2.无需揉的很光滑,盖上湿布或盖子,放温暖处发酵;(天气变冷,酵母加量,可用手温的温水和面)
  • 3.大约二个半小时左右,面团已发至满盆了,拉开面团看看,出现了大大的蜂窝;
  • 4.取出面团开始揉面,使劲按压面团并不断的旋转方向,10分钟左右面团揉得很光滑;
  • 5.把面团分割成你喜欢的大小,撒上适量的面粉防粘,
  • 6.如果要做戗面馒头,这时就要往面团里搋面粉,高的馒头是戗面馒头,
  • 7.矮趴的馒头是直接揉好了,在案板上用手一搓而成的,因为没有搋面粉,醒发的时候容易趴下;揉好的馒头盖上保鲜膜进行醒发;
  • 8.馒头醒发到开始膨胀发轻,就可以入锅;凉水上锅,中小火开始,开锅后转中大火,15分钟即可;
  • 9.关火后把锅盖稍微露一缝放气,再把馒头拾到盖垫上放凉就OK了;
