红薯全麦吐司,方法是我爱用的中种法,全麦面包粉配上红薯泥与葡萄干,成品不干巴,比较软和,香甜可口,家里两位试食团成员都赞——好吃!

  • 酵母3.5克
  • 70克
  • 黄油32克
  • 30克
  • 葡萄干45克
  • 蛋液适量(表面)
  • 红薯泥90克
  • 45克
  • 2克

Steps to make 红薯全麦吐司

  • 1.把中种材料放面包机里,全麦面包粉 100克,水 70克,红薯泥 30克
  • 2.中种料混合均匀后,发酵2倍大,呈现蜂窝奖
  • 3.下其余面团材料(黄油除外)
  • 4.面团拌均匀后下黄油
  • 5.待黄油被面团完全吸收后下葡萄干
  • 6.所有材料拌至均匀,取一小块也可以撑出膜的程度
  • 7.面团发酵2.5倍大
  • 8.发好的面团排气,分成三份,静置15分钟
  • 9.取一面团擀成圆片
  • 10.面片对叠
  • 11.再擀成长条形
  • 12.卷起面团
  • 13.做好面团放置吐司模具里
  • 14.发酵至9分满,涂上表面蛋液
  • 15.吐司放在烤箱180度里
  • 16.烤40分钟,出炉晾凉,可切片,或整个食用
