迷你冰皮月饼(柚子馅)
我这冰皮月饼是个迷你款,每个10克,稍微大些的15克,因为模子比较小,吃的人倒是挺方便,一口一个,我这做起来可就费劲了,不过这DIY 玩的就是享受过程,乐在其中。馅料是昨天自制的【柚子馅】,配上软糯的冰皮,口感极好。

冰皮月饼不好存放,所以最好现吃现做,2-3天之内一定要吃完,时间久了容易变质。

谢谢某位朋友把她家祖传压箱底的模子送我,据说比她年龄都大,有几个还是新的没用过滴,我太喜欢了,以后可以用来给面团造型,就算是普通的馒头造个型应该也会有动感吧,呵呵 想想都觉得高兴。这月饼做来做去年年都差不多,有个新造型就有个新感觉,我很喜欢,不知道亲们都喜欢吗?

  • 粘米粉35克
  • 澄面(小麦淀粉)20克
  • 牛奶130克
  • 糖粉50克
  • 黄油30克隔水融化
  • 椰子粉1小勺

Steps to make 迷你冰皮月饼(柚子馅)

  • 1.1.所有粉类混合拌匀,然后加入牛奶和黄油。
  • 2.搅拌成稀糊状,静置30分钟。
  • 3.然后蒙上保鲜膜,入蒸锅,上汽后蒸20分钟,取出晾凉(在蒸的过程中容器一定要用保鲜膜盖上,防止水蒸气流入面糊中)。
  • 4..凉后用手揉成光滑的面团。
  • 5.然后按照模子大小下剂子。
  • 6.皮和馅都滚圆,皮和馅的比例为1:1。
  • 7.7.取一个皮子,按扁,中间稍微厚一些,边缘薄一些,放上馅料。
  • 8.皮子向中间聚拢。
  • 9.收口,滚圆。
  • 10.表面沾上薄薄一层干糯米粉,多余的粉要抖掉。
  • 11.收口朝上放模子里造型。
  • 12.造型完事,很漂亮吧,迷你款,小孩子会更喜欢。
