  • 1.把仔姜和小尖椒洗净。辣椒红绿各半,这样好看。
  • 2.大蒜一个
  • 3.把姜切成薄片,辣椒切成小圈。
  • 4.大蒜拍碎。
  • 5.新鲜的鸭肉用清水洗干净,沥干水分。
  • 6.准备一把花椒。没有也可以不放。
  • 7.锅里多倒些油。
  • 8.油冒烟以后把鸭肉倒进去。
  • 9.反复翻炒。
  • 10.加入蒜末。
  • 11.撒入花椒。
  • 12.这时候需要一直煸炒,人不要离开锅,一直爆炒到锅里只有油冒烟水分了为止。大约需要10分钟左右。
  • 13.加入2汤勺郫县豆瓣酱。
  • 14.翻炒均匀。
  • 15.倒入2/3的姜片和辣椒。
  • 16.翻炒均匀,炒2分钟左右。
  • 17.倒入清水,超过鸭肉1CM左右。
  • 18.大火烧开,转中火。
  • 19.一直烧到水分快要干的时候倒入2汤勺酱油,放入剩余的姜片和辣椒。
  • 20.大火收汁,翻炒均匀,大约2分钟即可出锅。可以在这个时候撒入适量的鸡精调味。
