香芋红豆驴打滚
驴打滚是老北京和天津卫传统小吃之一。因其最后制作工序中撒上的黄豆面,犹如老北京郊外野驴撒欢打滚时扬起的阵阵黄土,因此而得名“驴打滚”。做好的“驴打滚”外层粘满豆面,呈金黄色,豆香馅甜,入口绵软,别具风味,豆馅入口即化,香甜入心,黄豆面入嘴后可以不嚼,细细品为最佳,是老少皆宜的传统风味小吃。

Steps to make 香芋红豆驴打滚

  • 1.准备好原用食材。
  • 2.将水磨糯米粉倒入网筛中过筛。
  • 3.加入水。
  • 4.用翻拌的方式,将面糊调匀。
  • 5.然后放入微波炉中加热1分钟,取出来搅拌一下,继续加热50秒,整体就全部熟了。
  • 6.等糯米团不烫手时,放入黄油揉匀。
  • 7.糯米团的粘性非常强,抓起再摔下,反复使糯米团更筋道。
  • 8.将糯米团表面裹上一层熟糯米粉。
  • 9.用擀面杖将糯米团擀开,擀成长方形。
  • 10.在糯米皮的一端,挤上一条芋头馅。
  • 11.再摆上一条红豆莲子馅。
  • 12.最上面,再挤一条芋头馅,用勺背抹平。
  • 13.从有馅的一端卷起,尾端边缘的皮要擀薄一点。
  • 14.要卷得紧一些,直到卷完,把封口捏紧一些。
  • 15.最后在熟黄豆粉中滚一圈,让表面裹满黄豆粉。
