冰梅酱是用青梅、冰糖和盐熬制成的酸甜酱料,用来调味,具有解腻开胃的作用。用冰梅酱来烧鸡块,梅子的清香和鸡块很好的融合到一起,味道酸酸甜甜,开胃解腻,烧好的鸡块松软而多汁,细细品一品,满口的肉香和冰梅的酸甜,让你吃了还想再吃~~

Steps to make 冰梅鸡块

  • 1.准备食材,鸡肉我用的是鸡全腿和鸡全翅,也可以用整只鸡或鸡腿,鸡翅,都可以,冰糖、冰花酸梅酱、生抽、葱姜、黄酒、食盐等。
  • 2.鸡腿、鸡翅剁成小块,冷水下锅,锅中放葱段、姜片,水沸后撇去浮沫,再煮两三分钟捞出。
  • 3.焯过水的鸡块用温水洗去附在鸡块上的渣滓,控干水份。
  • 4.炒糖色,锅中放2茶匙食用油,放入冰糖小火炒制。
  • 5.炒至冰糖呈深琥珀色,有密集的小泡泡(图片上这种程度就好)快速放入焯过水的鸡块。
  • 6.糖色炒至呈深琥珀色色时候,快速放入焯过水的鸡块翻炒至鸡块上色。整个动作要快,因为糖色到这种程度变化很快,也许慢十几秒,糖色就会变黑炒糊,那样做出来的菜品就会发苦,颜色也不亮。
  • 7.鸡块上色后,沿锅边烹入黄酒,淋入生抽,少许老抽。老抽几滴就好,多了成品会发黑。
  • 8.加入葱段、姜片炒出香味。
  • 9.加入温水,水量稍稍没过食材就好,然后盖上盖子,中小火烧制十几分钟。
  • 10.汤汁减少,加入4大茶匙冰梅酱。
  • 11.拣去葱姜不要,尝尝咸淡,根据自家口味加盐,改中火收汁。收汁的时候不要离开,一边收汁一边晃动锅子防止粘锅糊底。
  • 12.,最后把汤汁收浓即好,汤汁不要收的太干,留一些汤汁用来拌饭也不错~~
  • 13.成品。
