[经典衡东菜]《石湾脆肚》---三湘响雷
“石湾脆肚”原名“生炒肚丝”是衡东县石湾、三樟、大桥一带地方的家常口味菜。这道菜香辣脆爽,余味绵长。

这道菜多年来被列入湘粤一些大酒店菜谱。2008年全国烹饪大赛湖南赛区竞赛中,夺得金牌奖,被列入百道湘菜经典,真正是响脆三湘。

  • 1.干黄贡椒顶刀切碎段。
  • 2.蒜头拍一下剁碎。
  • 3.葱切段备用。
  • 4.猪肚用清水刮洗干净。
  • 5.用干清洁布擦干。
  • 6.斜纹切0.3cm宽肚丝。
  • 7.干黄贡椒蒜头入热油锅下盐2克,煸炒至香出锅。
  • 8.肚丝放盐3克、酱油、蚝油、味精、米酒拌均腌制一会儿。
  • 9.热油爆炒至肚丝卷起断生。
  • 10.肚丝断生后马上倒入干黄贡椒,葱段,胡椒粉翻炒均匀出锅装盘。
