Steps to make 自制油泼辣子

  • 1.准备粗细辣椒面。
  • 2.白芝麻,花椒粒,桂皮,香叶,八角,孜然粉和盐。
  • 3.香菜,香菇,大蒜,生姜和香葱洗干净备用。
  • 4.香菇切块,生姜切片。
  • 5.将粗细辣椒面,盐,芝麻和孜然粉放一小碗里搅拌均匀。
  • 6.将适量烧好的油晾凉后和辣椒面搅拌均匀,这样等下浇热油的时候不会因为油温太好辣子被烧焦。
  • 7.搅拌均匀。
  • 8.锅中倒油,油温六成热将香菜,香菇,大蒜,生姜,香葱和所有调料放进去。
  • 9.转小火将所有调料和辅料炸至变黄变焦。
  • 10.用漏勺捞出所有的调料和辅料,剩下油。
  • 11.别直接倒热油,关火放凉30秒,分两次淋入碗中,用筷子迅速搅拌(分次淋入热油味道更香还不容易烧焦)。
  • 12.第二次全部倒入,油量最好要没过辣子要多点。
  • 13.油会冒泡泡,此时迅速滴几滴米醋,辣子的香味马上扑鼻而来。
  • 14.晾凉,芝麻都会漂浮起来了。
  • 15.一个字香,两个字过瘾。
